Wairarapa Grains Collective mills its flour from durum wheat, a hardy, nutritious grain that’s higher in protein, minerals, and vitamins than regular wheat. Valued for millennia for its strength and flexibility—its name comes from the Latin word for ‘hard’—durum is beloved by bakers and pasta makers for its distinct flavor and handsome golden hue. Our finely milled durum flour is also excellent for breads and pizzas with that perfect, crispy crust.
